Milanese Green Parsley Sauce (Lombardy)

Ingredients

Garlic (Optional)- 1 clove

Breadcrumbs, soaked in vinegar- 4 tsps

Hard-boiled egg, finely chopped- 1

Anchovy fillets, finely chopped- 1-2

Capers, finely chopped- 1 tsp

Finely chopped parsley- 4 tbsps

Olive oil

Salt

 

Rub the inside of a small bowl thoroughly with the cut garlic clove and discard. Add the breadcrumbs, egg, anchovies, capers and parsley. Mix well and stir in olive oil, a little at a time, until the mixture is of a semi-liquid consistancy, rather like bread sauce. Check seasoning. Leave for 2 hours before serving. Whisk lightly and transfer to a sauceboat.

This sauce is usually served with boiled meat or fish.
