Gorgonzola Biscuits (Lombardy)

Ingredients

Butter- 6 tbsps

Gorgonzola cheese- 6 oz

All-purpose flour- 2 cups

Egg yolks, lightly beaten- 2

Grated nutmeg- 1/4 tsp

Salt and black pepper

Butter and flour for baking sheet

Egg white, lightly beaten- 1

 

Cream the butter, add the cheese and mix thoroughly. Add the flour, egg yolks, nutmeg and a little salt and pepper. Mix to a dough and pat gently into a square. Wrap in a clean cloth or foil and leave to rest, preferably in the refrigerator, for 30 minutes.

Sprinkle a pastry board lightly with flour and roll out the dough about 1/4 inch thick. Cut into circles 3 inches in diameter. Arrange them on a buttered and lightly floured baking sheet. Brush each circle with an egg white and decorate the edges with a fork. Bake in a hot oven (450F) for 15 to 20 minutes. Serve cold- the biscuits have good flavor of cheese and can be eaten alone with cheese.

Makes 18 biscuits.
