
Piedmontese Stuffed Peaches (Piedmont)

Ingredients
Fresh Peaches- 7 large
Sugar- 2 1/2 tbsps
Butter- 4 tbsps
Egg yolk, beaten- 1
Almond macaroons, crumbled- 5
Wash 6 of the peaches, dry them and cut them in half; remove the stones. Scoop out a little of the flesh in the middle and put this into a bowl. Add the flesh of the remaining peach and mash into a puree.
Add the sugar, 2 tbsps butter, the egg yolk and the crumbled macaroons to the pureed peach. Mix well and fill each peach half with some of the mixture, piling it up in the middle. Arrange the peach halves in a fireproof dish and dot with the remaining butter. Bake in a moderate oven (375F) for about 1 hour. Serve hot or cold.
