Honey Cookies (Sardinia)

Ingredients

All purpose flour - 2 cups

Honey - 1/4 cup

Butter - 2 tbsps

Egg - 1

Salt

Baking powder  -2 tsps

Milk

Butter and flour for baking sheet

 

Sift the flour into a bowl and make a well in the center. Heat the honey and butter together in a double boiler or in a copper pan, stirring until well blended. Beat the egg with a pinch of salt. Dissolve the baking powder in 2 or 3 tbsps milk.

Pour the honey mixture into th center of the flour, add the egg and the dissolved baking powder, cover with flour from the sides of the bowl, and mix the whole to a smooth dough. Roll out onto a floured pastry board to a thickness of about 1/8 inch and cut into shapes.

Rub a baking sheet with butter and sprinkle with flour, shaking the sheet to distribute it evenly. Arrange the pastry shpes on this, evenly spaced and well apart. Brush them with milk and bake in a moderate oven (375F) for about 10 minutes, or until they are a light brown color. Cool on wire racks.

The cookies will keep for some time in an airtight container.
