
Cold Gianduia Pudding (Piedmont)

Ingredients
Egg- 1
Egg Yolk- 1
Sugar- 1/2 cup
Bitter chocolate, grated- 2 1/2 squares
Butter- 5 tbsps
hazelnuts, roasted and chopped- scant 1/2 cup
Plain cookies- 1/4 pound
Butter for cake pan
Whiped Cream
Beat the whole egg, egg yolk and sugar together for 15 minutes or until very light and fluffy. Add the grated chocolate. Melt the butter in the top of a double boiler, add the egg and chocolate mixture and cook, beating constantly, until the mixture thickens. Fold in the nuts and finally the cookies, crushed.
Line a rectangular cake pan with wax paper and grease with butter. Add the pudding mixture, which should come level with the top of the pan. Cool, then chill in the refrigerator until firm. Turn out, cut into slices and serve with whipped cream.
