Cherries in Barolo Wine (Piedmont)

Ingredients
Large ripe (US Sour) cherries, pitted- 2 pounds
Sugar- 1 1/2 cups
Barolo or any full bodied red wine- 2 1/2 cups
Heavy (double) cream, whipped and sweetened- 1 1/4 cups
Put the pitted cherries into a pan or casserole, preferably an earthenware one. Add the sugar and wine. Bring slowly to a boil, lower the heat to simmering point and cook for 30 mins or until soft. Leave to cool, turn into a glass bowl and cover with whipped cream.
Serves 6.
