Stuffed Baby Squid (Sardinia)

Ingredients

Squid - 12 small

Garlic - 1 clove

Anchovy fillets - 2-4

Sprigs parsley - 2-3

Eggs, lightly beaten - 2

Breadcrumbs - 2-3 tbsps

Salt and pepper

Olive oil

Lemon wedges

 

Skin the squid, remove the ink sac and discard it. Rinse the squid thoroughly in cold water. Cut off the tentacles and chop them as finely as possible with the garlic, anchovies and parsley. Mix together eggs, breadcrumbs, a little salt, a generous amount of pepper and a trickle of olive oil. Add the chopped ingredients and work to a paste.

Stuff the paste into the squid and sew up the openings with strong thread. Sprinkle them with salt and pepper, and brush with oil. Broil over or under, moderate heat for 15 mins, turning and basting with oil. Serve hot with lemon wedges.
