Truffles Piedmontese Style (Piedmont)

This splendid dish is not easily made outside its homeland. Quantities are to taste.
Thoroughly clean some white truffles, brushing them and rubbing them with a damp cloth. Cut into paper-thin slices. Fill a small fireproof dish with alternate layers of truffles and thinly sliced fresh parmesan cheese, brushing each layer with a little olive oil and seasoning it with a pinch of salt and white pepper. Bake in a hot oven (425F) for about 10 minutes.
Serves immediately, garnished with lemon wedges.
