Wild Boar Steaks in a Sweet-Sour Sauce (Sardinia)

Ingredients

Boar steaks, cut from the rib - 2 pounds

Olive oil - 5 tbsps

Fat salt pork, finely chopped - 1/4 pound

Salt

Sugar - 4 tbsps

Bay leaves - 4

Wine vinegar - 1 1/4 cups

Seedless white raisins - 3/4 cup

Pitted prunes - 1/2 cup

Bitter chocolate, grated - 3 squares

Ground cinnamon or grated nutmeg - pinch

Flour - 4 tsps

 

In a large heavy frying pan heat the oil with the pork over low heat. Add the boar steaks and brown them on both sides. Sprinkle with salt and leave them to cook gently for 15 minutes.

Meanwhile, mke the sauce. Put the sugar in a small pan with the bay leaves and about two thirds of the vinegar, and cook gently, stirring, until it has dissolved. Add the white raisins and the chopped prunes,  the chocolate and a pinch of cinnamon or nutmeg. Stir well and cook gently until the sauce has thickened, about 10 minutes.

Mix the flour to a paste with the remaining vinegar and pour over the boar steaks. Stir well and cook for a further 10 mins. Add the sweet-sour sauce and continue cooking for 10 mins or until steaks are tender. Serve the steaks with the sauce poured over them.
