Ingredients
Clear stock - 8 cups
Eggs - 2
Grated parmesan cheese - 5 tbsps
Pepper
Mozzarella cheese, diced - 1/2 pound
Finely chopped parsley - 4 tsps
Fried bread - 12 slices
Bring the stock to a boil. Beat the eggs with parmesan and a sprinkling of freshly ground pepper. As soono as the stock comes to a boil, pour the egg mixture and let it cook for a minute or so until set. Add the mozzarella and parsley.
Put 2 slices of hot fried bread into each soup bowl and ladle the hot soup over the top.
