Spaghetti Country Style with Anchovy and Oregano Sauce (Sardinia)

Ingredients

Spaghetti - 1 1/2 pounds

Olive oil - 1/2 cup

Garlic, crushed - 2 cloves

Anchovy fillets - 5 large

Finely chopped oregano - 1 tsp

Salt

Finely chopped parsley - 2-3 tbsps

Grated pecorino or parmesan

 

Heat the oil in a frying pan and saute thr garlic cloves gently until they turn brown. Discard them, add the anchovies and continue to cook over the lowest possible heat until they have dissolved into a paste. Sprinkle with oregano and stir gently.

Bring plenty of salted water to a boil in a large pan and cook the spaghetti until al dente and drain well. Turn it into a heated serving dish; add the anchovy paste and the parsley, and stir thoroughly but lightly. Serve at once with plenty of grated pecorino cheese.

Serves 6
