Spaghetti with Cheese (Sardinia)

Ingredients

Spaghetti - 1 1/2 pounds

Olive oil - 1/3 cup

Garlic, finely chopped - 1-2 cloves

Finely chopped parsley - 2 1/2 tbsps

Finely chopped basil - 4 tsps

Ripe tomatoes, fresh or canned - 1 pound

Salt and pepper

Fiore Sardo cheese, sliced - 1/4 pound

 

Heat the oil in a deep frying ppan and gently saute the garlic, parsley and basil. Peel and chop the tomatoes, discarding seeds. Add the tomatoes to the pan, stir well and season to taste with salt and pepper. Cook over a brisk heat for 15 minutes.

Bring a large pan of salted water to a boil. Lower in the spaghetti slowly, making sure that the water does not cease to boil for even one minute, and cook until al dente. Drain thoroughly. Turn into a deep, heated baking dish, preferably of earthenware, and immediately cover with the tomato sauce, mixing it in thoroughly. Cover with slices of cheese and bake in a moderately hot oven (400F) for a few minutes to allow the cheese to melt. Serve at once.
