
Sicilian Fruit Fritters (Sicily)

Ingredients
Egg yolks - 2
Olive oil - 2 1/2 tbsps
Grated rind of 1/2 lemon
Vanilla extract, to taste
Salt - pinch
White wine - 1/2 cup
All purpose flour - 2 1/2 tbsps
Ripe firm fresh fruit - 2 pounds
Oil for deep frying
Egg whites - 2
Confectioners sugar
Beat the egg yolks with the oil, add the lemon rind, vanilla, salt and wine, and mix well. Sift the flour into another bowl and gradually add the egg mixture, beating constantly with a wooden spoon. Leave for 2 hours in a warm place.
Clean, peel and generally prepare whatever fruit is being used. Cut it into small pieces. Dry it in a cloth. Heat plenty of olive oil for deep-frying.
Beat the egg whites until stiff and fold them in the batter. Fold in the prepared fruit. Drop this mixture in a tablespoonfuls into the hot oil. As the fritters turn golden, take them out with a perforated spoon and drain on paper towels. Sprinkle generously with sifted confectioners sugar and serve hot
