
Stewed Artichokes Sicilian Style (Sicily)

Ingredients
Artichokes - 6 young
Lemon - 1
Olive oil - 1/2 cup
Onion, finely chopped - 1 small
Peas, shelled - 1 pound
Fava beans, shelled - 2 pounds
Salt and pepper
Grated nutmeg
Mint, chopped (optional) - 3-4 leaves
Wine vinegar (optional) - 1 tsp
Sugar (optional) - 4 tsps
Trim the artichokes and cut each one into eighths, dropping them into water acidulated with lemon juice until they are all prepared.
Heat the oil in a large pan and saute the onion until soft but not brown. Add the artichokes and cook for a few minutes longer, then moisten with 2/3 cup hot water. Bring to a boil, simer for 5 minutes, then add the shelled peas and beans. Season to taste with salt, pepper, and nutmeg, cover and simmer for 20 minutes longer, or until all the vegetables are tender, moistening with a little more water if necessary. Serve hot or cold.
