Sicilian Bread Pie (Sicily)

Ingredients

Once risen bread dough, made with 5 cups flour - 2 pounds

Olive oil

Unripened Caciocavallo cheese  -1/4 pound

Salted anchovies - 6-8

Cooked ham - 1/4 pound

Onion - 1

Ripe tomatoes - 3 large

Black olives , pitted - 12-16

Salt and pepper

 

Knead the risen dough, adding 2 1/2 tbsps oil. Divide the dough into two equal parts and roll it out into two rounds of equal size about 1/2 inch thick. Brush a round baking pan with oil and cover with one round of dough, Put aside.

Cut the cheese into thin slices. Thoroughly wash the anchovies to remove all salt, drain and cut into small pieces, discarding heads, tails and bones. Cut the ham into long strips. Slice the onion; peel and chop the tomatoes, discarding seeds and chop the olives. Cover the dough in the baking pan with slices of cheese, then add the anchovies, ham, onion, tomatoes and olives. Sprinkle lightly with salt and generously with freshly ground black pepper. Cover with the remaining round of dough and press the edges together firmly. Prick the top with a fork and brush lightly with olive oil. Bake the pie in a hot oven (425F) for about 40 minutes. Serve hot or cold.
