
Fried Cheese (Sicily)

Caciocavallo or Incanestrato cheese should be used.
Cut about 2 pounds cheese into 1/4 thick strips. Saute 1/2 clove garlic in 3 or 4 tbsps oil in a frying pan. As soon as the garlic browns, discard it and add the cheese. Fry over a low heat on both sides and sprinkle with 3-4 tsps wine vinegar. Add a pinch of sugar and a tsp of finely chopped fresh oregano and continue cooking for 5 minutes longer, taking care that the cheese doesnt overcook, as this will cause it to harden. Serve hot.
