Steamed Caciocavallo Cheese (Sicily)

Cut about 2 pounds caciocavallo cheese into strips about 1/4 inch thick and put them into a deep serving dish. Dress with 3-4 tbsps olive oil and a generous tsp of chopped oregano.

Fill a medium sized pan with water, bring it to a boil and rest the dish of cheese over the pan. Continue boiling until the cheese has melted about 15 minutes and serve immediately.
