Honey Coated Pastries (Apulia)

Ingredients

All purpose flour - 1 3/4 cups

Mild olive oil - 2 1/2 tbsps

Sweet white wine - 1/2 cup

Salt - pinch

Oil or lard for frying

Honey

 

Sift the flour into a bowl, make a well in the center and add the oil, wine and a pinch of salt. Mix to a firm dough and knead until smooth and elastic. Cover and leave to rest for about 1 hour.

Roll out the pastry a 1/4 inch thick and then with a pastry wheel cut it into strips about 1 inch wide. Tie these into bows or shape into triangles or circles, making carnival fritters.

Spread out on an oiled baking sheet and bake in a hot oven (425F) for 20 minutes.

Leave the pastries to cool and serve them coated with honey. 

The dough can also be rolled out very thinly, in which case the pastries will become even more puffed and delicate. Drain on paper towels, cool and dust with confectioners sugar.
