Ricotta Fritters (Apulia)

Ingredients

Ricotta Cheese - 1 1/2 cups

Soft breadcrumbs - 2 cups

Milk

Granulated sugar

Egg yolks, beaten - 2

Grated rind of 1 orange

Oil for frying

Flour

Eggs, well beaten - 2

 

Rub the ricotta through a sieve. Soak the breadcrumbs in milk and squeeze dry. Mix the breadcrumbs with the ricotta, 1/3 cup sugar, the egg yolks and grated orange rind. Blend thoroughly. 

Heat plenty of olive oil for deep-frying. Take a little of the ricotta mixture at a time, roll it first in flour and then in beaten egg. Deep-fry in hot oil until a pale golden color; drain on absorbant paper and serve, sprinkled with sugar. Makes about 40 fritters.
