
Sweet Peppers and Onions (Apulia)

Ingredients
Sweet peppers - 6 large
Sweet Onions - 3 large
Olive oil - 6 tbsps
Ripe tomatoes - 1 pound
Salt
Basil, finely chopped - 2-3 sprigs
Slice the onions very thinly. Heat the oil in a pan and soften the onions over a very low heat. Peel and chop the tomatoes, discarding seeds. Stir them into the onions, season to taste with salt and cook over a brisk heat for 15 minutes.
Wash the peppers, cut each one in half and scoop out the core and seeds. Cut them into strips about 1 inch wide and add them to the tomato sauce. Check seasoning, add the basil, stir well and cover. Cook over a low heat for 30 minutes or until the peppers are soft.
