
Stuffed Sweet Peppers (Apulia)

Ingredients
Sweet Yellow Peppers - 6
Soft breadcrumbs - 1/2 cup
Anchovy fillets, chopped - 6-8
Chopped capers - 1-2 tbsps
Pine nuts - 2-3 tbsps
Seedless white raisins - 2-3 tbsps
Salt and pepper
Parsley, finely chopped - 3 sprigs
Olive oil
Wash the peppers and char them under a hot broiler until their skins blacken and blister. Rub off the thin outer skin and cut each pepper in half lengthwise, discarding seeds and cores.
Mix together the breadcrumbs, anchovies, capers, pine nuts, seedless raisins, salt and pepper to taste and parsley. Add just enough oil to make a paste. Stuff a little of this mixture into each half pepper and arrange in a baking dish. Sprinkle with olive oil and bake in a moderate oven (375F) for 30 minutes.
