Baked Oysters Taranto Style (Apulia)

Fish

Ingredients

Fresh Oysters - 3 dozen

Parsley, finely chopped - 3-4 sprigs

Soft breadcrumbs - 1/4 cup

Pepper

Olive oil

Lemons - 1-2

 

Open the oysters with an oyster knife. Arrange them on their half shells in a fireproof dish. Sprinkle generously with parsley, lightly with breadcrumbs, and finish with plenty of freshly ground pepper. Trickle a little olive oil over each oyster and bake in a slow oven (325F) for 10 to 15 minutes. Serve immediately, garnished with lemon wedges.

Serve 6-12 oysters per person
