
Fried Mussels (Apulia)

Ingredients
Mussels - 3 - 3 1/2 quarts
Flour
Eggs - 2
Salt
Fine dry breadcrumbs
Oil for deep-frying
Lemons - 1-2
Thoroughly wash the mussels, scrubbing them with a brush if necessary. Open them with a strong short bladed knife and take the mussels from their shells. Drain well and roll in flour.
Beat the eggs lightly with a pinch of salt. Dip the floured mussels into the beaten eggs and then into the breadcrumbs.
Heat plenty of oil and fry the mussels until golden brown. Drain on absorbant paper. Serve very hot, garnished with lemon wedges.
