Baked Fish with Olives (Apulia)

Ingredients

Large Red mullet - 3

Salt

Olive oil - 2/3 cup

Wine vinegar - 1/2 cup

Green olives, pitted - 1 1/4 cups

 

Sprinkle the mullet lightly inside and out with salt and arrange them in a baking dish, preferably an earthenware one. Trickle the olive oil over the fish, sprinkle lightly with vinegar and salt and bake in a slow oven (350F) for about 20 minutes, turning them once carefully with a fish slice or a wooden spatula. Add the olives and continue baking for a few minutes longer until they are heated enough.

Take the fish from the pan. Serve garnished with the olives and a little of the pan juices.

Serves 6
