Fried Swordfish Steaks (Apulia)

Ingredients

Swordfish steaks - 2 pounds

Olive oil - 1/4 cup

Parsley, finely chopped - 2-3 sprigs

Juice of 1 lemon 

Salt and pepper

Flour

Eggs - 2

Fine dry breadcrumbs

Oil for frying

Lemons - 1-2

 

Skin the steaks and put them in a shallow bowl with the oil, parsley, lemon juice and a little salt and pepper. Leave to marinate for 1 hour. Then drain the steaks, wipe them dry and roll them in flour.

Heat plenty of oil in a deep frying pan. Beat the eggs lightly with a pinch of salt. Dip the swordfish steaks into the eggs, dust them with breadcrumbs, shaking off any excess, and fry at once in very hot oil. Lower the heat as soon as the fish is placed in the oil and fry over a moderate heat to ensure that it cooks right through. When golden brown on both sides remove the fish steaks and drain on absorbant paper. Serve very hot, garnished with lemon wedges.

Serves 4-6
