
Baked Kid on Skewers (Apulia)

Ingredients
Kid, leg or loin - 2 - 2 1/2 pounds
Salt and pepper
Lean bacon - 20 thin slices
Olive oil - 1/2 cup
Wash the meat, wipe it dry and cut it into 20 even sized cubes. Season with salt and pepper, and wrap each cube in a slice of bacon. Thread these on 4 or 5 skewers. Choose a suitable baking dish so that the skewers can rest on its sides without the meat touching the bottom. Brush the skewers with oil and bake in a moderately hot oven (400F) for about 20 minutes, turning them from time to time until they are evenly browned all over. Slip the pieces of meat off the skewers onto a heated serving dish and pour the cooking juices over the top.
