Pearl (Button) Onions Ivera Style (Piedmont)

Ingredients:
Pearl (Button) onions- 1 1/2 pounds
Olive Oil- 2 to 3 tbsp
Butter- 4 tbsps
Bay Leaf- 1 small
Stock- 2/3 cup
Salt
Dry White Wine- 2/3 cup
If possible, choose onions all of the same size. Peel them carefully and blanch them in boiling water for a few minutes. Drain well. Heat the olive oil and butter in a frying pan , add the onions, bay leaf, stock and a little salt to taste and cook very gently until the onions are golden brown and beginning to soften. Add the wine and continue cooking until this has reduced and the onions are soft. Serve hot.
