
Potato Pizza with Cheese (Apulia)

Ingredients
Floury potatoes - 3 pounds
Olive oil
Salt
Flour
Mozzarella or other fresh soft cheese, diced - 1/2 pound
Ripe tomatoes, sliced - 4 large
Pepper
Grated parmesan cheese - 2/3 cup
Finely chopped oregano - 1 tsp
Black olives, pitted and sliced - 12
Scrub the potatoes clean and boil them until soft. Drain and cool slightly, and as soon as they can be handled, peel and mash them with 1/4 cup olive oil and a little salt to taste.
Brush the bottom of a wide, shallow baking dish with oil, sprinkle with flour, spread with the mased potato and cover with the cheese and slices of tomato. Sprinkle lightly with salt and pepper, the parmesan cheese, oregano and olives. Trickle 1/4 cup olive oil over the top and bake in a hot oven (425F) for 15 minutes, or until the potato crust is brown and beginning to crisp. Serve immediately.
