Stuffed Prunes (Calabria)

Ingredients

Large dried prunes - 1 pound

Shelled walnuts - 1 cup

Bitter chocolate, grated - 5 squares

 

Soak prunes in boiling water for 5 minutes and rinse well. Wipe the prunes dry and make a slit in each one, just large enough to extract the pit. Push the sides of the slit apart slightly to make room for the filling.

Chop the walnuts roughly and mix with the chocolate. Fill the prunes with this mixture, close the openings and re-form them into their natural shape.

They may be served in small paper cases or, if preferred, simply plied in a pyramid on a dish.
