Fresh Figs in Rum Syrup (Calabria)

Ingredients

Slightly under-ripe figs - 2 pounds

Sugar - 1 1/8 cups

Rum - 5 tbsps

 

Wash the figs in running water and drain well in a colander. Dissolve the sugar in a casserole with about 1 1/4 cups water. Add the figs, lower the heat and simmer, covered, for 2 hours. Turn into a bowl and let the figs cool.

Arrange the cooled figs carefully in a glass preserving jar, add the syrup and fill the jar to the top with rum. Cover the jar with a disc of wax paper dipped in alcohol and the lid, and leave for several days before eating.
