Red Mullet Calabria Style (Calabria)

Ingredients

Red Mullet - 12

Salt

Olive oil - 1 cup

Finely chopped oregano

Juice of 1 lemon

 

Clean the fish with extreme care and wash them in salted water. If they have not been scaled, do this lightly as the skin is brittle. 

Pour about 1/2 cup olive oil into a shallow baking dish and lay the mullet on top in one layer. Season with salt, sprinkle generously with oregano, and pour over the remaining olive oil and the lemon juice. Bake in a moderate oven (375F) for about 15 minutes, or until the fish are cooked through but still firm and serve immediately in the same dish.
