Kid with Artichokes (Calabria)

Meat

Ingredients

Saddle of Kid - 3 - 3 1/2 pounds

Olive oil - 1 cup

Parma ham, finely chopped - 2 oz

Onion, finely chopped - 1 medium sized

Parsley, finely chopped - 2-3 sprigs

Flour - 5 tsps

Dry white wine - 1 1/4 cups

Salt and pepper

Artichokes - 6 young

Juice of 3 lemons

Egg yolks - 4

Marjoram - pinch

 

Wipe the meat with a damp cloth and cut into fairly even, medium sized chunks. Heat the oil in a flameproof casserole, add the meat, ham and onion, and the parsley. Saute gently until the pieces of meat are golden brown. Sprinkle lightly with flour and conitune cooking for another 10 minutes, stirring carefully to distribute the flour, then add the wine. Raise the heat and cook briskly until evaporated. Sprinkle with salt and pepper, cover the pan, lower the heat and cook for 30 to 45 minutes.

Meanwhile, clean the artichokes. Check seasoning, and continue cooking until meat is tender. If sauce is too thick, thin it with stock or water. Sauce should be thick and sparse.

Beat the egg yolks in a bowl with a pinch of salt and pepper and the remaining lemon juice. Add the reserved parsley and the marjoram. Pour this mixture into the simmering meat, stirring constantly. Take from the heat, cover and leave for a few minutes to allow the eggs to thicken without curdling. Serve immediately.
