
Roast Kid Country Style (Calabria)

Kid - 2 1/2 pounds
Pearl onions, peeled - 12
New potatoes - 1 1/2 pounds
Ripe tomatoes - 1 1/2 pounds
Salt and pepper
Finely chopped oregano
Olive oil - 1 cup
Water - 1 cup
Grated pecorino cheese - 3/4 cup
Wipe the meat with a damp cloth and cut it into even sized chunks. Put them in an earthenware casserole, and add the onions and potatoes. Peel and slice the tomatoes, discarding seeds, and add them to the casserole. Sprinkle with salt, pepper and a generous pinch of oregano. Add the olive oil and water, cover the casserole and cook in a slow oven (350F) for about 1 hour, or a little longer if necessary. Just before serving, sprinkle the meat with grated cheese.
