Noodles with Anchovy Sauce (Calabria)

Ingredients

Salted anchovies, boned - 7

Olive oil - 1 1/4 cups

Coarsely grated fresh breadcrumbs - 3 - 3 1/2 cups

Chili powder - pinch

Salt

Bucatini noodles - thick spaghetti

 

If using salted anchovies, wash them thoroughly to rid them of some of the salt.

Cut the anchovies into small pieces. Heat half the olive oil, add the anchovies and cook them until dissolved to a paste. Put aside but keep hot. Heat the remaining oil in another pan and saute the breadcrumbs until golden. Sprinkle with plenty of chili and keep hot.

Bring a large pan of salted water to a boil. Add the noodles and cook them rapidly until tender but still form.  Drain and dress them with the anchovy sauce. Serve immediately, accompanied by the breadcrumbs in a separate bowl. No cheese is served with this dish.
