
Shepherd's Noodles (Calabria)

Ingredients
Ricotta or cottage cheese - 2 cups
Salt and pepper
Pure pork sausage meat (optional) - 1 cup
Macaroni - 5 cups
Grated pecorino cheese - 3/4
Bring plenty of salted water to a boil in a lagre pan. While it is heating, mix the ricotta with a little salt and pepper, and beat until smooth. Add the macaroni to the boiling water and cook until tender but still firm.
Take a little of the water in which the macaroni is cooking and mixing this into the ricotta - just enough to make a thick sauce. Drain the macaroni, turn into a heated serving dish and dress with the ricotta sauce, pecorino and a little freshly ground pepper. Mix well and serve immediately.
