Calabrian Savory Rolls (Calabria)

Ingredients

Water - 1 1/4 cups

Salt - 1/2 tsp

Lard - 5 tbsps

All purpose flour - 1 1/2 cups

Eggs - 4

Diced salami - 1 cup

Diced caciocavallo cheese - 1 cup

Lard for baking sheet

 

Put the water, salt and lard in a pan, and bring to a boil. Take from the heat and add the flour all at once, beating vigourously with a wooden spoon. When it is completely blended, return the pan to the heat and continue cooking  until the paste comes away from the sides of the pan. Stir for 2 or 3 minutes longer, then take from the heat and let the paste cool. Beat the eggs in, one at a time. The paste will form air bubbles and also break apart. Add the salami and cheese, still beating hard.

Rub a baking sheet with lard and drop teaspoonfuls of the mixture on to it, rounding them off with a second teaspoon. Make sure each mound of dough is well and evenly spaced apart. Bake in a hot oven (450F) for 15 minutes. The rolls should be light, hollow and golden brown.

Makes 40 rolls.
