
Neapolitan Onions (Naples)

Remove the outer skins of 12 large mild onions, all which should be same size. Insert 2 cloves into each onion and arrange them in a baking dish into which they will all fit in one layer. Sprinkle with salt and pepper, pour over 1/2 cup olive oil and bury a sprig of thyme among them. Cover and bake in a moderate oven (375F) for about 1 hour or until the onions are soft but still retain their shape, shaking the dish occasionally. Then sprinkle the onions with 3 or 4 Marsala and return to the oven, uncovered, to allow it to evaporate .
Arrange onions on a heated serving dish and discard the cloves. Sprinkle with 3 or 4 tsps capers and serve immediately.
