
Truffled Anchovies (Piedmont)

Fillet about 1/2 pound salted anchovies nd wash them thoroughly. Arrange them in layers in an earthware dish, covering each layer with a little chopped parsley and a few paper-thin slices of white trufle. Add 1 or 2 cloves crushed garlic and enough olive oil to cover. Cover the dish and leave in a cool place for 3 to 4 days before serving.
