Boiled Octopus (Naples)

Clean and tenderize an octopus as directed in previous recipe. Put into larger pan and cover with water. Bring to boil slowly and simmer for 2 hours, or until tender. 

In the meantime, prepare a dressing of 6 to 8 tbsps olive oil, 2-3 tbsps lemon juice, 2 cloves garlic, finely chopped, 2-3 sprigs parsley, finely chopped, salt and pepper. Drain the cooked octopus and cut it into thin strips. Pour the dressing over it while it is still hot, and serve warm or cold.
