
Turkey Breast with Mozzarella and Tomatoes (Naples)

Raw turkey breast, about 2 pounds - 6 slices
Butter - 6 tbsps
Salt and pepper
Mozzerella cheese - 6 slices
Tomatoes, peeled and chopped - 3 large
Finely chopped parsley or basil, to garnish
Melt 4 tbsps butter in a wide frying pan. Add the slices of turkey breast and fry them until golden brown on both sides. Sprinkle lightly with salt and pepper. Place the turkey slices in one layer in a wide, shallow baking dish. Cover each slice of turkey with a slice of mozzarella and some of the tomatoes. Dot with slivers of butter and bake in a moderate oven (375F) for about 20 minutes or until the tomatoes are cooked and the cheese has melted. Just before serving, sprinkle with parsley or basil.
