Tench in Vinegar (Piedmont)

Olive oil........................

1/2 cup

Garlic, finely chopped.....

2 cloves

Onion, finely chopped.....

White wine vinegar........

3 tablespoons

Dry white wine..............

3 tablespoons

Salt

 

Black peppercorn...........

Sage............................

12 leaves

 Clean and thoroughly wash the tench. Dry them, dust with flour, and shake gently in a sieve. Fry in plenty of hot oil. Arrange them in an earthware dish.

Prepare the marinade. Heat the olive oil in a small pan and saute the garlic and onion until golden brown. Add the vinegar, wine, salt, peppercorns and sage. Bring this mixture to the boil, and pour at once over the fish. Cover and leave in a cool palce for at lease 2 days before serving.

Serves 6.
