Loin of Pork Neapolitan Style (Naples)

Ingredients

Olive oil - 1/2 cup

Garlic, crushed - 1 clove

Pork, cut from the loin - 6 slices

Salt and pepper

Sweet Peppers - 2 large

Ripe tomatoes, peeled and roughly chopped - 2 large

Fresh mushrooms, sliced - 1/2 pound

 

Heat the oil in a frying pan and saute the garlic clove until brown. Discard the garlic and add the pork slices. Brown them on both sides, sprinkle lightly with salt and pepper, and simmer gently. 

Char the peppers and rub off their thick outer skins. Cut the peppers in half, discard cores and seeds, and cut the flesh into thin strips.

Take the meat from the pan and keep hot. Add the peppers and tomatoes to the remaining fat, sprinkle with salt and pepper and cook over a moderate heat for 20 minutes. Stir in the mushrooms, cover the pan and simmer for 10 minutes longer. Return the pork slices to the pan, coat them with the sauce, and simmer for a few minutes longer to blend flavors.

Serve one or two slices of pork per person.
