
Veal Slices Sorrento Style (Naples)

Ingredients
Milk fed Veal, generous 1 1/2 pounds - 12 slices
Olive oil - 1/2 cup
Butter - 4 tbsps
Salt and pepper
Tomatoes, peeled and chopped - 3/4 pound
Parsley, finely chopped - 2-3 sprigs
Finely chopped fresh oregano - 1 tsp
Parma ham, paper-thin - 12 slices
Mozzarella cheese - 12 thin slices
Grated parmesan cheese
Flatten out the slices of veal as thinly as possible, removing any skin or sinews. Heat 5 tbps oil and all the butter together, and lightly fry the slices on both sides. Sprinkle with salt and pepper.
Heat the remaining oil in another pan, add the tomatoes, salt, freshly ground pepper, parsley and oregano, and cook quickly for 10 minutes, or until the tomatoes are reduced to a pulp.
Take the veal slices and on each one lay a slice of ham and one of mozzarella. Spread with a tablespoonful of tomato sauce and a generous sprinkling of parmesan cheese. Arrange the veal slices in one layer in a shallow baking dish and bake in a hot oven (425F) until the cheese has melted.
