Tomato Sauce Neapolitan Style (Naples)

Ingredients

Ripe or canned tomatoes - 2 1/2 pounds

Garlic - 3 cloves

Olive oil - 1 cup

Basil - 2-3 sprigs

Parsley (optional) - 2-3 sprigs

Salt and pepper

Finely chopped oregano (optional) - 1 tsp

 

Eash, peel and chop the tomatoes, discarding seeds. Crush the garlic cloves with the blade of a knife. Heat the oil in a moderately deep pan and saute the garlic cloves until brown. Discard them and add the herbs, tomatoes and salt and pepper to taste. Cook for 30 minutes over a moderate heat. If using oregano, which should be fresh, add this at the last moment.
