Mushroom Pizza (Naples)

Pizza

Ingredients

Fresh mushrooms - 1 pound

Garlic - 2-4 cloves

Olive oil - 10 tbsps

Parsley, finely chopped - 2-3 sprigs

Salt

Pepper- optional

 

Wash and peel the mushrooms thinly. Slice the caps thinly, discarding stems. Crush the garlic cloves with a knife blade and saute in the oil until brown. Discard the garlic cloves and add the mushrooms, parsley and a pinch of salt to taste. Saute gently for about 10 minutes. Spread this mixture over the pizza dough, sprinkle with a little pepper if liked and proceed as above.
