Pizza with Baby Clams or Mussels (Naples)

Pizza

Ingredients

Italian peeled tomatoes, drained and chopped - 14 oz can

Salt

Finely chopped fresh oregano, or to taste - 3-4 tsps

Olive oil - 6-8 tbsps

Baby clams or mussels - 2 quarts

Garlic, finely chopped - 2-4 cloves

Parsley, finely chopped - 2-3 sprigs

Pepper

 

Spread the tomatoes evenly over the pizza dough, sprinkle lightly with salt and oregano, and half the olive oil. Bake in a very hot oven (475F).

Meanwhile, clean the clams or mussles thoroughly and arrange them in a pan with the remaining olive oil, and the garlic and parsley. Cook over a moderate heat until they open, shaking the pan occasionally. Then discard the shells and keep the clams or mussels warm in their liquor.

As soon as the pizza comes out of the oven, spread it evenly with the shellfish and sprinkle generously with pepper.
