
Pizza of the Four Seasons (Naples)
Pizza
Lay 2 strips of pastry over the pizza dough in the form of a cross in order to divide it into four even compartments.
In the first compartment, scatter a tablespoonful each of cooked shrimps or prawns and boiled baby squid, coarsely chopped.
In the second compartment, spread a small tomato, peeled and chopped and top with 3 finely chopped anchovy fillets.
In the third compartment, scatter a tablespoonful of diced mozzerella cheese and a tsp of grated parmesan, a small tomato, peeled, drained and chopped and a pinch of oregano.
In the fourth compartment, put a small tomato, peeled, drained and chopped, 2 or 3 finely chopped anchovy fillets, a pinch of oregano and a small pinch of pepper.
Sprinkle the pizza with 2 or 3 tbsps olive oil and break an egg in the middle. Season lightly with salt and bake as above.
