Fried Mozzerella Sandwiches (Naples)

Ingredients

Olive oil for deep-frying

Eggs- 3

Milk - 2-3 tbsps

Salt

Sandwich loaf, about 1 pound

Mozzerella cheese - 1 1/2 pounds

Flour

 

Heat a large pan of olive oil for deep-frying. Beat the eggs with the milk and a pinch of salt. Cut the bread into 24 slices, removing all crusts. Trim each slice into a triangle and round off the corners. Cut the mozzerella into 12 slices, matching the shape and size of the bread slices as nearly as possible. Sandwich a slice of mozzerella between two slices of bread. Dust lightly with flour and drop each sandwich into the beaten eggs. Deep-fry, two or three at a time, until golden brown on both sides. Take from the pan with a perforated spoon and drain on paper towels. Serve immediately.
