
Swordfish Casserole (Abruzzo)

Ingredients
Swordfish - 1 1/2 pounds
Salt and pepper
Olive oil - 2/3 cup
Potatoes, thinly sliced - 2 pounds
Onion, sliced - 1 large
Garlic, finely chopped - 1 clove
Parsley, finely chopped - 4 sprigs
Hot chili pepper, finely chopped - 1/2
Cut the fish into medium thick steaks and sprinkle them with salt and pepper on both sides.
Brush a moderately deep baking dish with oil and cover the bottom with half of the potato and onion slices. Sprinkle with salt and pepper, and add all the fish steaks in a single layer. Sprinkle them with some of the oil all the garlic and parsley and scatter a few pieces of chili pepper over the top. Cover with the remaining potato and onion slices, sprinkle with a little more salt and pepper, and pour in the rest of the oil. Bake in a moderate oven (375F) for at least 1 hour or until potatoes are soft.
