
Broiled Red Mullet (Abruzzo)

Ingredients
Red mullet - 12 small
Salt
Olive oil - 4 tbsps
Bay leaves - 2
Parsley - 2-3 sprigs
Thyme - pinch
Chives - a few
Black peppercorns - 3-4
Clean and wash the mullet in salted water. Put the oil, bay leaves, parsley, thyme, chives and peppercorns into a large shallow dish and add the fish. Turn them round so that they are all thoroughly coated with oil and leave to marinate for about 1 hour.
Then cook fish over charcoal until cooked.
